HALLOWEEN EYEBALL RECIPE: GIANT EDIBLE COW EYEBALLS

These spooky eyeballs are a fun, gelatin-free treat using coconut milk and agar agar. You'll create a black pupil with food coloring and layer it with a white base in spherical molds for a realistic, wobbly effect.

- In a small heat-safe bowl, drop a pea-sized amount of each red, green, and blue gel food coloring. Set aside.
- In a medium saucepan, combine the two cans of coconut milk and 2/3 cup water (total liquid should be 4 cups). Add 2 teaspoons of agar agar and whisk thoroughly until fully dissolved.
- Set the saucepan over medium-high heat and bring to a gentle boil, then lower the heat to maintain a simmer.
- Stir in 1/2 cup white sugar until completely dissolved. Taste the mixture and add more sugar by the tablespoon if you prefer it sweeter, stirring to dissolve. Remove from heat.
- Measure out 1/4 cup plus 1/8 cup (3/8 cup total) of the warm agar mixture and pour it into the bowl with the food coloring. Whisk until the color turns black. Spoon 1 tablespoon of this black mixture into the bottom of each of six spherical molds placed on a cookie sheet. Refrigerate the molds.
- After about 15 to 30 minutes, check if the black layer has set. If it has, gently ladle the remaining white coconut mixture on top of the black layer in each mold, dividing evenly and leaving a small gap at the top. If the white mixture has begun to solidify, reheat it gently until liquid again.
- Once all molds are filled, press the lids onto each mold firmly but gently. Return the molds to the refrigerator.
- Allow the eyeballs to chill for several hours until fully set. If you have extra mixture, repeat the process to make two more eyeballs. Remove from molds and serve as desired.
