These Halloween monster witch cupcakes start with a chocolate cake mix and flax eggs, baked in black liners. Frost them in orange and black, then decorate with candy eyes and skeleton heads for a frightfully fun treat.

  1. Preheat the oven to 350°F and set out cupcake pans lined with black cupcake liners.
  2. Give each liner a quick spray with non-stick cooking oil or coconut oil spray to prevent sticking.
  3. In a large bowl, whisk together the wet ingredients (almond milk, oil, and flax eggs), then add the chocolate cake mix and beat until smooth.
  4. Fill each liner about three-quarters full with batter, then bake for 20 to 22 minutes – test with a toothpick; if it comes out clean, they're done. Ovens vary, so you may need extra time.
  5. Let the cupcakes cool completely in the pan before you start frosting.
  6. Divide your frosting into separate bowls and tint one orange and one black (or choose any Halloween colors).
  7. Transfer the frostings to piping bags and pipe onto the cupcakes however you like – neat patterns aren't necessary. Alternatively, use a spatula or spoon to spread it on.
  8. Top the cupcakes with candy eyes and any other decorations you have; the more chaotic and spooky, the better. I found tiny pink and blue skeleton heads that worked great. Have fun and get creative!
