Ingredients
Directions
- Use Halloween-themed cookie cutters to cut shapes from both types of tortillas. You'll need enough for three layers on a baking sheet. Heat oil to 350°F and fry the shapes until golden and crisp, about 2 minutes, flipping halfway. Drain on paper towels and salt immediately. Don't throw away the scraps—fry those too and use them for the base layers.
- Line a rimmed baking sheet with the fried tortilla scraps and any broken pieces to form the first chip layer.
- Spread one-third of the seasoned ground beef, black beans, chili beans, green onions, jalapeño slices, cilantro, salsa, and a mix of Mexican cheddar and Pepper Jack cheese over the chips. Repeat the layering, using more scraps and some Halloween shapes. For the final layer, arrange all the remaining Halloween-shaped chips on top and around the edges in a fun, spooky pattern.
- Bake the nachos at 350°F for 15 minutes, then serve with extra salsa, sour cream, diced tomatoes, lettuce, or taco sauce as desired.
