- Insert the lollipop stick into the creamy center of each cookie. For a stronger grip, briefly dip the tip of the stick into melted chocolate before inserting it; this creates a secure anchor as the chocolate sets.
- If you are using standard cookies without extra filling, opt for flat-sided sticks to ensure they sit securely within the cookie.
- Prepare your coating by melting the candy melts or bark according to the package instructions. I prefer using a microwave-safe bowl for quick and easy results. Dip each cookie-pop into the dark chocolate for the bat design or the orange coating for the pumpkin design, then set them aside to firm up completely.
- While the coated cookies are setting, prepare the bat wings by cutting shapes from the grape fruit leather. I found that one sheet yields approximately four wing pairs, allowing you to create multiple bats from a single package.
- Once the chocolate coating on the bat pops is nearly set, press white sprinkles onto the front to form the mouth and fangs, along with larger round sprinkles for the eyes. To attach the wings, apply a small amount of melted chocolate to the back of each wing piece and press it onto the cookie. Allow the bats to dry in an upright position.
- For the pumpkin pops, once the orange coating is fully hardened, fill a small bag with melted chocolate and snip off a corner to create a makeshift piping bag. Draw jack-o'-lantern faces onto the cookies. Add a chocolate chip to the top for a stem, then pipe light green melted chocolate to create trailing vines. Finally, insert the sticks into a styrofoam block covered with a black plastic tablecloth to keep everything standing upright while the details set.
