These spooky cheesy eyeballs are a quick and healthy Halloween party snack. Made from mini cheese rounds, green and black olives, and red gel food coloring, they look gory but taste delicious. Serve chilled with veggies and crackers for a crowd-pleasing treat.

  1. Peel off the wax coating from the mini cheese rounds. With a paring knife, carve a small hollow in the center of each cheese circle, just big enough to hold a green olive slice.
  2. Gently insert a green olive slice into each hollow, pressing it down so it stays in place without breaking the olive.
  3. Slice each black olive into three round pieces. Position one black olive round in the middle of each green olive to form a pupil. For a snug fit, use a chopstick or skewer to tuck the black olive's edges into the green olive's center.
  4. Using a small paintbrush, dip into red gel food coloring and draw wavy lines radiating from the olive outward to create a bloodshot look. Aim for 6 to 8 lines per eyeball for the best effect.
  5. Refrigerate the eyeballs until you're ready to serve. Present them alongside fresh vegetables and your choice of crackers or pita bread for a healthy Halloween appetizer.
