Halloween Party Food: Potato Beetles Recipe

These potato beetles make a spooky and delicious Halloween appetizer. Small purple or black fingerling potatoes are roasted until tender, then given legs made from wild rice. Cream cheese is piped on to create eyes and decorative patterns, turning simple potatoes into creepy critters.

- Set your oven to 450°F. Combine the fingerling potatoes, olive oil, and garlic salt in a big bowl, mixing well. Arrange them in one layer on a baking sheet covered with foil, and roast until soft (about 25 minutes). Take them out and allow to cool.
- For each potato, insert around 10 grains of wild rice into each side to form little legs.
- Load a pastry bag fitted with a very narrow tip (or a zip-top bag with a tiny corner snipped off) with softened cream cheese. Pipe two small dots for eyes on the front of each potato, then add stripes or wavy lines for decoration.
