Haunted Halloween Eyeball Crazy Cake Chocolate Cupcakes

These Halloween cupcakes use a simple crazy cake method—no eggs, milk, or butter needed. Just mix dry ingredients, create wells for wet ingredients, and bake. Top cooled cupcakes with orange frosting and candy eyeballs for a creepy treat.

- Preheat your oven to 350°F. Line a standard non-stick cupcake pan with paper liners, then lightly spray the top of the pan with non-stick baking spray to prevent any sticking.
- In a large mixing bowl, whisk together the first five dry ingredients: 1½ cups flour, 3 tablespoons cocoa, 1 cup sugar, 1 teaspoon baking soda, and ½ teaspoon salt. Make three depressions in the dry mixture—two small and one larger. Pour 1 teaspoon white vinegar into one small well, 1 teaspoon vanilla extract into the other small well, and 5 tablespoons vegetable oil into the larger well. Pour 1 cup water over everything, then mix thoroughly until the batter is smooth.
- Fill each cupcake liner about three-quarters full with batter. Bake on the middle oven rack for 15–20 minutes, or until a toothpick inserted into the center of a cupcake comes out clean. Let the cupcakes cool completely before frosting. We used orange frosting and topped each frosted cupcake with a candy eyeball.
