This traditional Irish colcannon recipe is perfect for Halloween. Mashed potatoes are mixed with cooked kale or cabbage, butter, and milk, then seasoned simply. Serve it hot, optionally topped with extra butter for a rich, satisfying dish.

- Place peeled potatoes in a pot of salted water, bring to a boil, and cook until fork-tender. Then drain and mash them.
- In a separate pan, cook chopped kale or cabbage in just enough water to cover until softened. Drain and mince finely.
- Combine the mashed potatoes with the cooked greens, butter, and milk. Add salt and pepper to taste.
- Present immediately while hot, perhaps with an extra pat of butter on top.
