The process involves portioning the coconut, mixing in the colors with a bit of water if needed, spreading the coconut on lined trays, and allowing it to dry completely before storing in airtight containers.

  1. Prepare four small baking sheets by lining them with parchment paper.
  2. Weigh out 300 grams of desiccated coconut and portion it equally into four separate glass or ceramic bowls.
  3. Introduce a drop of black, green, and yellow food coloring to three of the bowls. For the fourth bowl, combine yellow and red to create orange, and mix red with blue to create purple.
  4. If your coloring is in gel or powder form, add a teaspoon of water to each bowl to help the pigment adhere to the coconut. Add more water gradually if the mixture seems too dry to blend smoothly.
  5. Use a small spoon to mix the ingredients thoroughly until every piece of coconut is evenly coated with the chosen color.
  6. Transfer the colored coconut from each bowl onto the prepared baking sheets, spreading the pieces out so they form a single, even layer.
  7. Allow the trays to sit in a cool, dry location for at least 24 hours, or overnight, to ensure the coconut is fully dried. Stir the coconut once or twice during this time to promote even drying.
  8. When the coconut is completely dry, transfer it into airtight jars or containers for storage. If you are unsure if the coconut is fully dry, leave the containers open for a few extra hours before sealing them.
  9. As long as the sprinkles are fully dry and kept in sealed containers, they will remain fresh until the expiration date printed on the original coconut packaging.
