These homemade pumpkin pie pop tarts feature a ready-made pie crust filled with a spiced pumpkin mixture. After baking until golden, they're topped with a simple glaze and festive Halloween sprinkles. A fun, easy treat for the season.

- Set your oven to preheat. In a medium bowl, stir together the pumpkin puree, brown sugar, egg, and pumpkin pie spice until well combined. Put the bowl aside.
- Lightly dust your work surface with flour and unroll one pie crust. Using a knife or pizza cutter, cut the crust into rectangular shapes of your preferred size. (I made small rectangles.)
- Place a small spoonful of the pumpkin filling onto the center of half of the rectangles. Top each filled rectangle with another piece of pie crust.
- Press the edges of each tart with the tines of a fork to seal them all around.
- Arrange the tarts on a baking sheet. Bake until they turn golden brown, then let them cool completely to room temperature.
- Whisk together the glaze ingredients until smooth. Drizzle the glaze over the middle of the pastries, and immediately scatter the sprinkles on top.
