Irish Potato Candy

Irish Potato Candy is a sweet confection that looks like small potatoes. Made with cream cheese, coconut, and cinnamon, it's a fun and easy no-bake dessert. Refrigerate before serving, and they keep well for days.

- In a large bowl, use a handheld mixer on medium speed to beat the cream cheese, butter, vanilla, and salt until light and fluffy, about 1 minute. (A stand mixer with paddle attachment also works.) Scrape down the bowl sides with a rubber spatula. Add the confectioners' sugar and mix on low speed just until combined, about 30 seconds. Increase speed to medium and beat, scraping the bowl halfway, until smooth, about 1 minute. Scrape again, add the coconut, and beat on low until incorporated, about 30 seconds. Refrigerate until firm, about 30 minutes.
- Line a baking sheet with parchment paper. Place the cinnamon in a small bowl. Scoop tablespoon-sized portions of the coconut mixture into your hand and roll into a ball. Roll the ball in cinnamon, then shape into an oblong potato shape. Arrange on the prepared sheet. Repeat with remaining mixture. Refrigerate until ready to serve.
- These candies can be made up to 5 days ahead. Store in an airtight container in the refrigerator.
