Ingredients
Directions
- If making your own cake, bake it as directed and let it cool fully. (I used a boxed mix.)
- In a medium bowl, beat the butter until fluffy. Mix in the melted chocolate and cocoa powder thoroughly.
- Gradually add powdered sugar and mix well, then add milk one tablespoon at a time until the frosting is smooth and spreadable.
- Crumble the cooled cake into a large bowl.
- Mix in 1/2 cup of the prepared frosting with a wooden spoon. It will take a few minutes; the mixture should become less crumbly and start to hold together. If still dry after mixing, add 1-2 more tablespoons of frosting until a small squeeze holds its shape.
- Form 24 balls, each just over an inch in diameter. Roll them in your hands to round; don't stress about perfect shape, as you can smooth them after chilling. Once formed, place the tray in the freezer for 15 minutes.
- Remove from freezer and gently roll any balls that need smoothing. Return the tray to the freezer while you melt the candy melts.
- Melt the candy melts in a microwave-safe bowl in 20-second bursts, stirring between each, until smooth. Alternatively, use a double boiler on low heat, being careful to keep water out. If the chocolate isn't smooth, stir in 1-2 teaspoons of vegetable shortening or coconut oil.
- Take cake balls out of freezer. One at a time, dip one end of a cake pop stick into the melted chocolate, then gently push it into a cake ball without going all the way through. Repeat for all sticks. Freeze for 2-5 minutes to set the chocolate on the stick.
- If needed, remelt the chocolate before coating the cake pops.
- Coat each cake pop by dipping and twirling it in the melted chocolate until fully covered. Tap the stick on the bowl's side to remove excess. Place on a parchment- or silicone-lined baking sheet, or stick them into holes poked in a cardboard box to dry.
- Melt 2 tablespoons of chocolate chips in a microwave-safe bowl using the same method as before.
- Dip a toothpick's tip in the melted chocolate and draw faces on the cake pops.
- Pipe a green gel icing stem on top of each cake pop.
