Mini Halloween Cheesecakes

These mini cheesecakes start with a graham cracker crust, then get a creamy cheesecake layer swirled with pumpkin spice batter. After baking and chilling, they're decorated with black gel to look like adorable little jack-o-lanterns.

Directions
- Set your oven to 325°F and place mini paper liners into a mini muffin tin.
- Combine 1 1/2 cups graham cracker crumbs, 1/4 cup sugar, and 1/2 cup melted butter. Press the mixture firmly into the liners.
- In a bowl, beat 16 oz softened cream cheese with 1/2 cup sugar until smooth. Mix in 2 eggs one at a time, then add 1 tsp vanilla extract.
- Split the batter into two equal portions. Stir 1/2 cup pumpkin puree, 1 tsp pumpkin pie spice, and a few drops of orange food coloring (if using) into one half.
- Spoon a small amount of plain batter into each liner, then top with the pumpkin batter. Use a toothpick to create a swirl pattern.
- Bake for 15 to 18 minutes, until the centers are set. Let them cool, then refrigerate until firm.
- Finish by drawing jack-o-lantern faces on each cheesecake with black decorating gel.
