Monster Eyeball Cupcakes

These monster eyeball cupcakes start with a simple chocolate cake base. A fluffy green buttercream frosting is piped on top and decorated with candy eyes for a creepy Halloween treat. Perfect for parties or trick-or-treaters.

- Preheat the oven to 325°F.
- In a large bowl, combine the chocolate cake mix, 1 cup water, 1/2 cup vegetable oil, and 3 eggs. Whisk until smooth. Line a cupcake pan with paper liners, then fill each liner about halfway with batter. Bake for 20 minutes, or until a toothpick inserted comes out clean. Let cool completely.
- For the frosting, beat together 1 cup butter (softened) and 1 cup shortening in a mixer until smooth. Mix in green food coloring until desired shade is reached. Add 2 teaspoons vanilla extract and the entire 2-pound bag of powdered sugar, beating until combined and smooth. Pour in 1/4 cup water and whip on high for 3–5 minutes until fluffy. If needed, add more water 1 tablespoon at a time.
- To decorate, fill a piping bag fitted with a large star tip with the green frosting. Pipe a swirl onto each cooled cupcake. Press small candy eyes into the frosting.
