This pumpkin bread pudding uses brioche cubes soaked in a rich pumpkin custard, then baked until set. The recipe calls for bourbon and a blend of spices for deep flavor. Serve it warm with caramel for a decadent dessert.

- Cut the brioche loaf into 1-inch cubes. Spread them out and leave uncovered overnight to dry. Alternatively, arrange on a baking sheet and toast at 200°F for 20 minutes, then cool completely.
- Preheat your oven to 350°F and butter a 2- to 3-quart baking dish. In a large bowl, beat the brown sugar, egg yolks, and whole eggs until smooth. Stir in the pumpkin puree, milk, heavy cream, bourbon (if using), vanilla, cinnamon, salt, nutmeg, and ginger.
- Add the dried bread cubes to the pumpkin mixture and toss until evenly coated. Let it sit for 10 minutes so the bread absorbs the custard.
- Transfer the mixture to the prepared dish and bake until the custard is set, about 40 to 45 minutes. Allow it to cool for 20 minutes before slicing. Serve warm with caramel sauce.
