  1. Start by preheating your oven to 375°F. Prepare a muffin pan by lining it with paper liners or giving it a light spray of nonstick cooking spray.
  2. In a large mixing bowl, whisk together the all-purpose flour, granulated sugar, pumpkin pie spice, ground cinnamon, baking soda, baking powder, and fine sea salt until evenly combined.
  3. Add the pumpkin puree, vegetable oil, applesauce, beaten eggs, and vanilla extract to the dry ingredients. Stir gently just until the batter comes together—be careful not to overmix. Then fold in the chocolate chips.
  4. Using a large cookie scoop or ice cream scoop, portion the batter into the prepared muffin cups, filling each about three-quarters full. If you like, press a few extra chocolate chips onto the tops.
  5. Bake the muffins for 20 to 22 minutes, or until a toothpick inserted into the center of a muffin comes out clean. Remove from the oven and let them cool in the pan for a few minutes, then transfer to a wire rack to cool completely.
