This Pumpkin Juice recipe blends soaked dried apricots with pumpkin purée and a spiced apple juice infusion for a smooth, thick drink. The process involves soaking, simmering spices, blending, and straining to create a velvety beverage. Serve it chilled or at room temperature for a fall-inspired treat that's perfect for Halloween or cozy gatherings.

  1. Place the dried apricots in a bowl with the 1½ cups of water and let them soak for a minimum of 4 hours, or leave them in the refrigerator overnight.
  2. Combine the apple juice, cinnamon stick, allspice berries, ginger slices, and split vanilla bean in a saucepan. Heat until it's just about to boil, then reduce the heat to low and let it gently cook for 10 minutes. Remove from the heat and allow it to cool slightly.
  3. Pour the soaked apricots along with their soaking water into a blender and process until you have a smooth mixture.
  4. Add the pumpkin purée and ground nutmeg to the blender and blend once more until combined.
  5. Pour the cooled apple juice mixture through a fine mesh strainer into the blender, catching only the liquid. Discard the solids. Blend everything together until smooth.
  6. Set a fine mesh strainer over a pitcher and pour the blended mixture through it, pressing on the pulp to extract the thick juice. Before serving, garnish the pumpkin juice with a sprinkle of ground nutmeg.
