Pumpkin Mummy Hand Pies

These Pumpkin Mummy Hand Pies feature a flaky homemade crust filled with spiced pumpkin cream cheese filling. After baking, they're decorated with candy eyes and a cinnamon sugar coating for a festive Halloween treat.

- In a large bowl, whisk together the all-purpose flour, granulated sugar, and salt. Set aside.
- Use the large holes of a box grater to quickly grate the frozen unsalted butter. Add it to the flour mixture and use a pastry blender to cut it in until the mixture looks like small peas.
- Stir in the ice cold water with a wooden spoon until the dough comes together. To check, press some dough between your fingers—if it sticks, it's ready. If needed, add up to 3 more tablespoons of water, one at a time.
- Turn the dough onto a lightly floured surface, knead a few times to form a ball, then divide in half. Flatten each half into a disc, wrap in plastic wrap, and refrigerate for at least 1 to 2 hours.
- In a small bowl, beat together the room temperature cream cheese, granulated sugar, and packed light brown sugar with an electric hand mixer until combined. Add the pumpkin, egg yolk, cinnamon, ginger, nutmeg, allspice, and vanilla extract, and beat until well combined. Cover and chill until ready to use.
- In a small bowl, mix together the granulated sugar and ground cinnamon for the cinnamon sugar. Set aside.
- Preheat the oven to 375°F. Line a large baking sheet with parchment paper.
- Roll one dough disc on a lightly floured surface into a 13x11-inch rectangle. Trim edges to straighten, then cut into nine 4x3-inch rectangles.
- Place the rectangles on the prepared baking sheet. Spread a heaping tablespoon of pumpkin filling onto each, leaving a border around the edges.
- Roll out the second dough disc and cut into 1/2-inch wide strips.
- In a small bowl, whisk together the egg white and water to make an egg wash. Brush the edges of the filled rectangles with egg wash, then top with the strips to create a mummy look. Press the edges to seal, trim excess strips, then brush the strips with egg wash and sprinkle with cinnamon sugar.
- Bake until golden brown, about 20 minutes. Once cool, stick candy eyes onto the mummies.
- Store the hand pies in an airtight container in the refrigerator. They are delicious topped with whipped cream!
