These Halloween Mini Bat Taco Cheeseballs are a fun, savory treat for your spooky party. Cream cheese, taco cheese, and seasoning form bite-sized balls that are chilled, then coated in crushed blue corn chips. Each bat gets tortilla chip wings and olive eyes for a cute, festive look. Serve with extra chips and knives for dipping.

  1. Use a stand mixer with the paddle attachment or a hand mixer in a large bowl. Beat the cream cheese until it's light and fluffy. Then stir in the taco cheese, taco seasoning, and a pinch of salt.
  2. Using a tablespoon-sized scoop or a spoon, portion out the mixture. Roll each portion between your palms to form balls roughly the size of ping pong balls. Continue until all the mixture is used.
  3. Arrange the balls on a plate and cover tightly with plastic wrap. Chill in the refrigerator for at least two hours, or overnight—the flavor improves with a bit of resting time.
  4. Just before serving, prepare the decorations. Put a few handfuls of blue corn tortilla chips into a sturdy freezer bag (thick plastic that won't tear easily).
  5. Squeeze out the air, seal the bag, and crush the chips with a rolling pin until they become a fine powder. Transfer the crushed chips to a small bowl—you'll need about 1 cup.
  6. Roll each chilled cheeseball in the crushed chips, pressing lightly so they stick. Place the coated balls on a serving platter. For wings, insert a whole tortilla chip into each side of each ball, long side first.
  7. Gently but firmly press two sliced black olives onto each bat to create eyes.
  8. Serve immediately, accompanied by extra corn chips and small spreading knives.
