These Halloween Mini Bat Taco Cheeseballs are a fun and savory treat. Cream cheese and taco flavors form the base, while blue corn tortilla chips become wings and olive slices become eyes. They need at least two hours to chill, making them easy to prep ahead for your spooky celebration.

- Using a stand mixer fitted with a paddle attachment or a hand mixer in a large bowl, whip the softened cream cheese until it's light and airy. Then incorporate the shredded taco cheese, taco seasoning, and a tiny bit of salt.
- Use a tablespoon-sized cookie scoop or a regular spoon to portion out the mixture. Form each portion into a ball about the size of a ping pong ball, repeating until all the cheese mixture is used.
- Arrange the balls on a plate, cover with plastic wrap, and chill for at least two hours or overnight (the flavor improves with more time).
- When ready to serve, start the decorations. Put a couple of handfuls of blue corn tortilla chips into a thick plastic freezer bag that won't tear easily.
- Press the air out of the bag, seal it, and crush the chips with a rolling pin until they become a fine powder. Transfer the crushed chips to a small bowl; you'll need roughly 1 cup.
- Take each chilled cheeseball and roll it in the crushed chips, gently pressing to coat evenly. Arrange them on a serving platter, then insert a whole tortilla chip into each side (with the long side going in first) to resemble wings.
- Attach two olive slices to each bat for eyes, pressing gently but firmly so they stay in place.
- Serve right away, with extra corn chips and small knives for spreading alongside.
