  1. Cover a work surface with a large sheet of parchment paper. Place apples on a cutting board and slice them vertically (from stem to bottom) in pieces slightly larger than 1/2 inch. You should be able to get three thick slices from each apple. Insert an ice pop stick in the bottom center of each apple slice. If your apples have tough skins, use a small fruit knife to cut a slit in the bottom of each apple before inserting the sticks.
  2. Melt the candy coating in its microwave-safe tray (or a microwave-safe bowl) at 100% power in 30-second intervals until the candy can be stirred smooth, about 1-1/2 minutes total. Dip each apple slice into the candy coating and use a small spatula or spoon to help completely cover the apple. Allow the excess candy to fall back into the tray.
  3. Immediately place the dipped apple on the parchment paper and decorate with your favorite candy. Repeat the process with the remaining apple slices, white candy coating and assorted candies. Allow the apple slices to stand until set, about 30 minutes. Serve immediately.
