These Halloween bat taco cheeseballs combine creamy taco-flavored cheese with a crunchy blue corn chip coating, shaped into cute bats with tortilla wings and olive eyes. They require at least two hours of chilling, making them a perfect make-ahead appetizer. The recipe yields bite-sized savory treats ideal for Halloween gatherings.

- Using either a stand mixer fitted with a paddle attachment or a hand mixer in a large bowl, whip the cream cheese until it's light and airy. Next, add the shredded taco cheese, taco seasoning, and a tiny pinch of salt, and mix until combined.
- With a tablespoon cookie scoop or just a spoon, portion out the mixture. Then roll each portion between your palms into balls roughly the size of ping pong balls, using all the mixture.
- Arrange the cheese balls on a plate, cover tightly with plastic wrap, and chill for a minimum of two hours, or even overnight (the flavor improves with time).
- Just before serving, prepare the decorations. Put a couple of handfuls of blue corn tortilla chips into a sturdy freezer bag (the thick kind that resists tearing).
- Seal the bag, squeezing out as much air as you can, then crush the chips with a rolling pin until they become a fine powder. Transfer the crushed chips to a small bowl; you should have roughly one cup.
- Roll each chilled cheese ball in the crushed chips, pressing gently so they stick evenly. Set them on a serving platter, then insert a whole tortilla chip into each side (pointed end first) so they resemble bat wings.
- For the eyes, press two sliced black olive rounds onto each bat, applying gentle but firm pressure.
- Serve right away alongside additional corn chips and small knives for spreading.
