These spooky cupcakes start with vanilla cupcakes topped with rich chocolate buttercream. Each cupcake gets a homemade tombstone made from a ladyfinger dipped in black candy coating and labeled with RIP icing. They're easy to assemble and perfect for Halloween gatherings.

  1. Prepare 12 vanilla cupcakes using your preferred box mix or recipe, then let them cool completely.
  2. Line a baking sheet with wax paper for the tombstones.
  3. Break 6 ladyfinger cookies in half to create 12 tombstone shapes.
  4. In a microwave-safe bowl, combine 1 cup white candy melts with 1 tsp coconut oil. Microwave in 30-second bursts, stirring between each, until fully melted and smooth.
  5. Add ¼ tsp black gel food coloring to the melted candy and stir until the color is uniform.
  6. Dip each ladyfinger half completely into the black candy coating, then place it gently on the wax paper.
  7. Let the coated ladyfingers sit until the candy sets completely.
  8. Make the chocolate buttercream: beat 2 sticks softened butter, 4 cups confectioner sugar, 2 tbsp cocoa, and 3-5 tbsp milk on low speed until combined.
  9. Increase the mixer speed to high and beat until the frosting is light and fluffy.
  10. Transfer the buttercream to a piping bag and frost each cooled cupcake.
  11. Once the candy coating on the ladyfingers is firm, use black decorating icing to write “RIP” on each one.
  12. Gently press one tombstone cookie into the frosting on each cupcake. Happy Halloween!
