These Sausage Stuffing Bites combine sweet Italian sausage, stuffing mix, and veggies into tender balls baked until golden. A simple cranberry-honey-mustard sauce adds a tart-sweet finish. Perfect for Thanksgiving or Christmas gatherings.

  1. Set the oven to 400°F and spray two baking sheets with cooking spray. In a big bowl, beat the eggs. Pour in the stuffing mix and milk, then stir to coat everything. Allow the mixture to rest until the cubes become soft, roughly 10 minutes.
  2. While the stuffing sits, place a large skillet over medium heat and melt the butter. Toss in the chopped onion, celery, and a pinch of salt and pepper. Cook the vegetables, stirring every now and then, until they are tender, which should take about 5 to 7 minutes. Set aside to cool a bit.
  3. Break the bulk sausage into small pieces and scatter them over the stuffing mixture. Add the cooked onions and celery, parsley, and poultry seasoning. Sprinkle with salt and pepper, then stir everything together until it is just mixed.
  4. Shape the mixture into balls that are 1½ inches in diameter, using about 2 tablespoons per ball. Place these balls on the greased baking sheets.
  5. Bake the bites, swapping the sheets from top to bottom racks halfway through the baking time. Continue until they are deeply browned and fully cooked, which should be around 20 minutes.
  6. In a medium bowl, mix together the cranberry sauce, honey, and Dijon mustard. Season with a little salt and pepper.
  7. Move the finished bites to a serving platter. Sprinkle chopped parsley on top. Serve the cranberry sauce on the side.
