- Set your oven to 400°F and allow it to warm up.
- While the oven heats, thoroughly rinse your fresh vegetables and chop them into the required sizes.
- Create a hollowed-out center in the cauliflower to form a bowl shape.
- Cook the eggs in boiling water over medium heat for 6 minutes for a runnier yolk, or 5 minutes for a firmer center. Simultaneously, boil the hot dogs for 2 to 3 minutes.
- Lightly coat a large baking sheet with a small amount of olive oil.
- Spread the bulk of the refried beans onto the prepared sheet, top with a portion of the Mexican blend cheese, and shape the mixture to resemble a reef while keeping the center empty. Bake for 5 minutes to melt the cheese and blend the flavors.
- Warm the reserved cup of refried beans on the stovetop.
- Mix the guacamole with half of the can of RO*TEL® Mild Diced Tomatoes and Green Chilies and set this mixture aside.
- In a separate bowl, combine the entire can of RO*TEL® Original Diced Tomatoes and Green Chilies, the remaining RO*TEL® Mild Diced Tomatoes and Green Chilies, the sliced black olives, and the diced green and red peppers to create a salsa-like topping. Set aside.
- Position the prepared cauliflower bowl in the center of the baking sheet.
- Pour the heated cup of refried beans into the hollowed-out cauliflower.
- Layer the guacamole and RO*TEL® Mild mixture over the beans, allowing it to spread and ooze down the sides.
- Arrange the prepared salsa mixture around the bean and cheese base.
- Peel the boiled eggs, slice them in half, and remove the yolks. Insert Halloween-themed eyeball decorations into the egg whites (ensure all decorations are clean before contact with food). Arrange the remaining egg halves around the tray.
- Slice the cooked hot dogs in half and make cuts to resemble fingernails. Dip the tips in ketchup or guacamole to mimic blood, then place the hot dog 'fingers' around the perimeter of the tray.
