These spooky skull potatoes are carved from mini creamer potatoes, then roasted with a smoky paprika seasoning. The lemon water bath keeps them from browning while you carve, and the result is a delightfully eerie and tasty Halloween treat.

- Set your oven to 385°F and let it preheat.
- Cover a baking sheet with parchment paper.
- Rinse the potatoes under cool water and set them aside.
- Fill a bowl with 4 cups of cold water and stir in 2 tablespoons of lemon juice.
- With a paring knife, carefully carve spooky skull faces into each mini potato. Drop each carved potato into the lemon water bowl to prevent browning.
- In a separate bowl, combine the olive oil, remaining 1 tablespoon of lemon juice, salt, onion powder, garlic powder, paprika, and black pepper.
- Drain the potatoes and toss them in the seasoned oil mixture until evenly coated.
- Arrange the potatoes face-up on the prepared baking sheet. Bake for about 30 minutes, until golden and tender.
- Sprinkle with parsley flakes and extra salt if desired before serving.
