These spooky skull potatoes are carved from mini creamer potatoes, then roasted with a smoky paprika seasoning. The lemon water bath keeps them from browning while you carve, and the result is a delightfully eerie and tasty Halloween treat.

  1. Set your oven to 385°F and let it preheat.
  2. Cover a baking sheet with parchment paper.
  3. Rinse the potatoes under cool water and set them aside.
  4. Fill a bowl with 4 cups of cold water and stir in 2 tablespoons of lemon juice.
  5. With a paring knife, carefully carve spooky skull faces into each mini potato. Drop each carved potato into the lemon water bowl to prevent browning.
  6. In a separate bowl, combine the olive oil, remaining 1 tablespoon of lemon juice, salt, onion powder, garlic powder, paprika, and black pepper.
  7. Drain the potatoes and toss them in the seasoned oil mixture until evenly coated.
  8. Arrange the potatoes face-up on the prepared baking sheet. Bake for about 30 minutes, until golden and tender.
  9. Sprinkle with parsley flakes and extra salt if desired before serving.
