Stuffin' Muffins

These Stuffin' Muffins turn classic stuffing into handy individual servings. Sautéed sausage, onion, celery, and herbs are mixed with bread cubes and baked in a muffin tin until golden. Perfect for passing around the table or enjoying as leftovers.

- Position a rack in the center of the oven and preheat to 375°F. Lightly coat a standard 12-cup muffin tin with cooking spray.
- In a medium skillet over medium heat, melt the butter. Add the sausage and cook, breaking it apart with a wooden spoon, until browned, about 7 minutes. Add the chopped onion and celery and cook, stirring now and then, until softened, roughly 7 more minutes. Stir in the garlic, sage, rosemary, and thyme; season with salt and pepper. Set aside to cool slightly.
- In a large bowl, whisk together the eggs and chicken broth. Add the bread cubes and the cooled sausage mixture, season with salt and pepper, and toss until well combined. Divide the stuffing mixture evenly among the prepared muffin cups.
- Bake the muffins until warmed through and golden on top, 25 to 30 minutes.
