- Heat your oven to 350°F and cover a baking sheet with parchment paper.
- In a small saucepan, combine the butter, maple syrup, and brown sugar. Cook over medium heat, stirring now and then, until everything is melted and smooth. Take it off the heat and stir in the rosemary, thyme, cinnamon, nutmeg, cayenne, and 1 teaspoon of salt.
- In a large bowl, beat the egg white with a whisk until it becomes frothy. Add the nuts and toss to coat. Pour the glaze over the nuts and stir until they are evenly covered.
- Spread the nuts in a single layer on the prepared baking sheet. Bake for about 15 minutes, stirring every 5 minutes. The nuts are ready when the glaze turns golden and dry, and you can smell them toasting.
- Remove from the oven and right away sprinkle with a little extra sea salt.
- Allow the nuts to cool completely, then store them in an airtight container.
