White Chocolate and Walnut Apple Snack Cake

This easy one-bowl cake combines whole wheat and all-purpose flours with maple syrup, warm spices, and tart apples. Folded with white chocolate chips and walnuts, it bakes up moist and tender, finished with a simple white chocolate drizzle for extra sweetness. Perfect for apple season snacking or dessert.

- Heat the oven to 350°F and lightly coat a 9x13-inch baking pan with butter.
- In a large mixing bowl, combine the melted butter, maple syrup, and vanilla extract, whisking until smooth.
- In a separate medium bowl, stir together the whole wheat flour, all-purpose flour, baking powder, salt, cinnamon, and ginger. Gradually add the dry mix to the wet ingredients, stirring just until incorporated.
- Gently fold in the chopped walnuts, 3/4 cup white chocolate chips, and diced apples.
- Spoon the thick batter into the prepared pan and spread it evenly. Bake for 35–40 minutes, until golden brown and a toothpick inserted in the center comes out clean. Let the cake cool on a wire rack.
- Melt the remaining 1/2 cup white chocolate chips in a microwave or double boiler until smooth. Pour the melted chocolate into a small plastic bag, snip a tiny corner off, and set aside.
- Once the cake is fully cooled (or nearly), drizzle the melted white chocolate over the top using the bag. Slice and serve.
- Store leftovers tightly covered at room temperature for up to a couple of days.
