Wicked Good Apple Cider Muffins

These apple cider muffins combine warm spices, sweet apple cider, and mini chocolate chips for a delightful fall bake. The batter comes together quickly and bakes up tender with a slightly crisp top. Let them cool just a few minutes before enjoying.

- Heat your oven to 350°F and line a 12-cup muffin tin with paper liners.
- In a large bowl, whisk together the flour, sugar, baking powder, salt, and apple pie spice.
- In another bowl, beat the eggs, then mix in the oil, apple cider, and milk until combined.
- Pour the wet ingredients into the dry and stir gently until only a few lumps remain (the batter will be somewhat thin).
- Fill each muffin cup about two-thirds full with batter.
- Sprinkle chocolate chips evenly over the top of the batter.
- Bake for 20 to 22 minutes, or until a toothpick inserted in the center comes out mostly clean.
- Let the muffins rest in the pan for 5 minutes, then transfer them to a wire rack to cool completely.
