- In a stand mixer, combine the egg whites, cream of tartar, and vanilla, then gradually add 3 cups of powdered sugar while mixing on low speed. Increase speed and beat until stiff peaks form.
- If the royal icing is too runny (like soup), add the extra half cup of powdered sugar and mix until stiff.
- Once stiff peaks are achieved, divide the icing evenly into three separate bowls.
- Add black gel coloring to one bowl, purple to the second, and green to the third. Stir each until you reach your desired shade.
- Spoon each colored icing into its own piping bag (three bags total).
- Drizzle the colored icings over the cooled cake, alternating colors, to create a marbled effect.
- Place the edible eyes randomly over the icing-covered cake.
- Let the cake sit for about 10 minutes before serving to allow the icing to set slightly.
