These Easy Brownie Mix Halloween Monster Cookies are a quick and fun way to get into the spooky season. By combining a box of brownie mix with flour, oil, and eggs, you create a rich cookie dough that's studded with M&M candies. The addition of candy eyeballs gives each cookie a playful monster face. - Set your oven to 325º F and allow it to warm up.
- Grab a large mixing bowl and dump in the entire box of brownie mix along with the all-purpose flour. Pour in the vegetable oil and crack the eggs into the bowl. Stir everything together until the ingredients are just barely mixed.
- Gently stir the M&M candies into the dough. Save roughly a quarter of a cup of the candies aside for decorating the tops later.
- Take a cookie scoop holding about 1.5 tablespoons of dough and place mounds onto a baking sheet lined with parchment paper, spacing them roughly 2 inches apart. Press a few candy eyeballs and the reserved M&M candies onto the top of each dough mound.
- Slide the tray into the hot oven and bake for 12 to 14 minutes. You want the cookies to be fully cooked but still soft enough to hold their shape without crumbling.
