These easy fortune cookies start with a simple batter of egg whites, flour, sugar, and almond flavor. After baking, you quickly fold in a fortune and shape them over a bowl. Finish by dipping in melted white chocolate and adding sprinkles for a festive treat.

  1. Set your oven to 400°F. Using an electric mixer, whip the egg whites until stiff peaks form.
  2. Add the flour, sugar, and almond flavoring to the egg whites and whisk until combined.
  3. Stir in the water until the mixture is smooth.
  4. Drop tablespoon-sized portions of batter onto a lightly greased baking sheet or silicone mat, making two cookies at a time.
  5. Bake for 5 minutes, until the edges are lightly browned.
  6. Remove from the oven and work quickly: place a fortune paper across the center of each cookie, then fold it in half loosely, pinching the top and pressing the bottom fold against the rim of a small bowl or ramekin to shape. Don't let them cool too much or they'll crack.
  7. Set the shaped cookies in the bowl to cool and hold their form.
  8. Once all cookies are done, if desired, melt the white chocolate wafers in the microwave according to package directions. Dip each cookie into the melted chocolate, then sprinkle with sprinkles while the chocolate is still warm.
  9. Place the dipped cookies on wax paper and let the chocolate set completely.
