These eyeball pinwheels are a fun and savory Halloween appetizer. Cream cheese and ranch spread on tortillas with ham and black olives, rolled, chilled, and sliced into pinwheels. A sliver of roasted red pepper in the olive creates the eerie eyeball effect.

- In a bowl, combine the softened cream cheese with the dry ranch seasoning, mixing until smooth.
- Place a tortilla on a flat surface. Trim a small strip from two opposite sides to create a more rectangular shape.
- Evenly spread a layer of the cream cheese mixture over the tortilla.
- Arrange a line of about six black olives end-to-end along one of the untrimmed edges. Then place two slices of ham in the middle area, overlapping if needed.
- Starting from the edge with olives, carefully roll the tortilla. Ensure the olives stay in place, and roll as tightly as possible without tearing. Continue rolling over the ham until the entire tortilla is rolled into a log. Repeat with remaining tortillas.
- Wrap each tortilla log individually in plastic wrap and refrigerate for at least 4 hours, or overnight.
- After chilling, unwrap one log. Using a sharp knife, cut slices about 1/3 to 1/2 inch thick to create pinwheels.
- Cut small thin strips from the roasted red pepper. Fold a strip in half and insert it, folded side up, into the hole of the olive in the center of each pinwheel. If the olive doesn't have a visible hole, flip the pinwheel over—the other side usually has one.
- Arrange the finished pinwheels on a serving plate or tray.
