Green Monster Muffins: A Healthy Spinach And Avocado Recipe

These Green Monster Muffins blend spinach, avocado, and milk into a vibrant batter that is folded with flour, sugar, and chocolate chips. After baking until firm, the treats are decorated with extra chocolate chips and edible googly eyes for a fun, festive finish.

Ingredients

Directions

  1. Turn your oven on to 375°F and prepare two standard 12-cup baking trays. Since this batch yields 16 treats, you will need extra liners for the remaining slots. Alternatively, a mini muffin pan works well to create more individual portions. Line 16 cups with paper liners and set them aside.
  2. Grab a large mixing bowl and combine the flour, brown sugar, baking soda, and salt. Whisk them together thoroughly to ensure the dry components are evenly distributed.
  3. Place the spinach, milk, eggs, avocado, and melted butter into a food processor. Process the ingredients until they form a smooth, fully blended mixture, which should take roughly 5 minutes.
  4. Transfer the green liquid from the processor into the bowl with the dry ingredients. Use a spatula to stir everything together until no dry pockets remain. Then, gently fold in half of the chocolate chips to distribute them throughout the batter.
  5. Spoon the batter into the prepared liners, filling each one about three-quarters full to allow space for rising during baking.
  6. Press the remaining chocolate chips onto the surface of each muffin. Add the edible googly eyes to create the monster faces.
  7. Place the trays in the oven and bake for 18 to 22 minutes. The tops should feel firm to the touch rather than soft. To verify they are fully cooked, insert a toothpick into the center of a muffin; if it emerges clean and dry, they are done. Allow the muffins to cool before serving.
