These Halloween Jello Roll Ups are a creative dessert featuring homemade gelatin ghosts and colorful Jello rolls on skewers. You'll make firm ghost shapes from unflavored gelatin, then prepare Jello with marshmallows that separate into two layers as they chill. Roll the Jello, slice, and assemble with ghosts and marshmallows on skewers for a festive, kid-friendly snack.

- In a small bowl, sprinkle the unflavored gelatin.
- Pour in the cold water and stir with a whisk until the gelatin is fully dissolved.
- Add the sweetened condensed milk and set the bowl aside.
- Bring ½ cup of water to a boil, then pour it over the gelatin mixture and whisk until smooth.
- Stir in the orange extract.
- Position your ghost mold on a small baking sheet or cutting board; this makes it simpler to move to the fridge without spilling.
- Carefully pour the gelatin into the ghost molds, leaving a small gap at the top so the ghosts release easily. Overfilling can cause the edges to stick when unmolding.
- Refrigerate the mold for 2 to 3 hours, or until the ghosts are firm.
- To remove the ghosts, gently push up from the bottom of the mold until each ghost pops out.
- Empty the package of Jello into a medium bowl.
- Add 1 cup of boiling water and whisk until the Jello is completely dissolved.
- Add the 3 cups of mini marshmallows and microwave on high for 1½ minutes. The marshmallows will become slightly puffy.
- Whisk the hot mixture until it is smooth and uniform.
- Pour the mixture into a 9x13-inch pan.
- Refrigerate for 2 hours, or until firm. As it chills, the marshmallow layer will naturally separate from the Jello, creating two distinct colors.
- Once set, gently lift the edges of the Jello to loosen it from the pan, then transfer it to a cutting board.
- Starting from the middle of the long side, roll the Jello as tightly as you can.
- Using a sharp knife, cut the roll into slices about ½-inch thick. The slices need to be substantial enough that a skewer can pass through without tearing.
- Repeat steps 10 through 18 for each additional Jello flavor you want to use.
- Take a 10-inch skewer. Feel free to mix and match different colored Jello rolls.
- When threading a Jello roll onto the skewer, pierce the tail end first and slide it down. This technique prevents the roll from unraveling.
- Ghosts slide more easily than Jello rolls. To keep them in place, skewer a mini marshmallow first, then add the ghost. The marshmallow acts as a stopper. Position ghosts on top of Jello rolls or between two rolls.
- Once all skewers are assembled, arrange them on a platter and serve.
