  2. In a medium-sized bowl, combine the flour, cocoa powder, baking soda, and kosher salt using a whisk.
  3. In a separate large bowl, beat the room-temperature butter, granulated sugar, egg, and vanilla extract on medium speed for at least 3 minutes until the mixture becomes smooth and creamy, scraping the sides as necessary.
  4. Gradually incorporate the dry mixture into the wet ingredients, mixing only until combined. Then, fold in the plain M&M's, saving a handful for decoration.
  5. Cover the bowl and chill the dough in the refrigerator for at least 1 hour.
  6. Scoop out 2-tablespoon portions of dough and shape them into balls. Arrange them on the prepared tray, ensuring they are spaced at least 2 inches apart. Press the reserved M&M's onto the tops if desired.
  7. Bake the cookies for 12 to 14 minutes.
