Halloween Recipe: Frankenstein Pasta

This Halloween recipe turns green pesto pasta into a fun Frankenstein face. You'll make a vibrant pesto, cook spinach cavatappi, then shape the pasta into a square. Decorate with mozzarella eyes and olive features for a festive fright.

- Put fresh basil, Parmesan, pine nuts, garlic, salt, and pepper into a food processor.
- With the processor running, slowly add the extra-virgin olive oil until a smooth pesto forms.
- If you want a brighter green, stir in a few drops of green food coloring and pulse to blend. Set aside.
- Fill a large pot with water, salt it generously, and bring to a rolling boil.
- Drop the green spinach cavatappi into the boiling water.
- Cook the pasta following the package directions until al dente.
- Drain the pasta and toss with a pinch of salt.
- Pour the pesto over the pasta and stir until evenly coated.
- Arrange the pasta on a platter in a square shape to form Frankenstein's head.
- Cut two round slices of mozzarella and place them on the pasta as eyes.
- Set one black olive in the center of each cheese slice to create pupils.
- Use additional black olives to form hair above the pasta, and a mouth and nose on the face.
