Ingredients
Directions
- Finely mince the 6 garlic cloves and put them aside.
- Fill a large pot with water, bring it to a boil, add 1 tablespoon of salt, and cook the 1 pound of dried squid ink spaghetti according to the package directions.
- While the pasta cooks, pour 1/3 cup of olive oil into a large pan and add the minced garlic.
- Cook the garlic and oil over low heat for 4 minutes, stirring often.
- Stir in 1 teaspoon of crushed red pepper flakes and cook for another 30 seconds.
- Use a measuring cup to scoop out 1/2 cup of the pasta cooking water.
- Carefully pour that 1/2 cup of pasta water into the garlic oil mixture.
- Let the garlic oil and water mixture simmer until you're ready to drain the pasta.
- Before draining, reserve another 1 cup of the pasta cooking water.
- Add the drained cooked pasta to the garlic mixture, turn the heat to high, and toss well to coat.
- If the pasta seems dry, add a bit more of the reserved cooking water, then serve immediately.
