These Rice Cereal Monsters are a playful Halloween treat made from marshmallow cereal balls, fitted with plastic vampire teeth and candy eyes. The recipe yields 16 monsters that need at least an hour of chilling before assembly, and they can be stored airtight for later enjoyment.

  1. In a large pot over medium-low heat, melt 8 tablespoons of unsalted butter with 12 cups of mini marshmallows (about 2 bags), stirring until completely smooth.
  2. Take the pot off the heat and stir in 1/2 teaspoon salt, 1 teaspoon vanilla, and 12 cups of rice cereal, mixing until every piece is coated.
  3. Transfer the mixture to a large greased bowl or onto a greased baking sheet.
  4. Lightly butter your hands, then firmly press and roll the mixture into 16 balls, each weighing about 65 grams, and place them on a baking sheet.
  5. Refrigerate the cereal balls for at least 1 hour so they firm up.
  6. With a serrated knife, carefully cut a wedge from each chilled ball—large enough to hold a set of plastic vampire teeth. Set the wedges aside.
  7. Fit a pair of plastic vampire teeth into the opening of each ball.
  8. Cut about 1/2 inch from each end of the saved wedge, then insert these small pieces into the opening on both sides to close up the monster's mouth.
  9. Poke two holes for the eyes and press a chocolate or peanut butter candy piece into each hole.
  10. Store the finished monsters in an airtight container until you're ready to serve.
