- In a large bowl, whisk together the pumpkin puree, melted butter, vanilla extract, brown sugar, milk, and eggs until smooth.
- Pour the dry ingredients into the wet mixture and stir gently until just incorporated. Be careful not to overmix.
- Using a rubber spatula, fold the mini chocolate chips into the batter evenly.
- Lightly spray a 24-cup mini muffin tin with olive oil cooking spray to prevent sticking.
- Use a mini cookie scoop to divide the batter evenly among the 24 muffin cups.
- Bake in a preheated 350°F oven for 15 to 18 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
