Pumpkin Deviled Eggs Recipe

These pumpkin deviled eggs are a festive twist on a classic appetizer. Hard-boiled eggs are halved and filled with a creamy mixture of yolks, pumpkin puree, and spices, then piped to resemble tiny pumpkins. A snippet of chive or green onion creates the perfect stem for a spooky snack.

- Put the eggs in a saucepan and add enough water to cover them completely.
- Heat the pan over medium-high heat until the water reaches a boil.
- Once boiling, lower the heat to low, put a lid on the pan, and let the eggs cook gently for 10 to 12 minutes.
- When the time is up, move the eggs to a bowl filled with ice water so they cool down quickly.
- After the eggs are cool, remove the shells and slice each egg in half lengthwise.
- Carefully take out the yolks and put them into a small bowl. Use a fork to break them up.
- Mix in the pumpkin puree, mayonnaise, Dijon mustard, lemon juice, and paprika with the yolks.
- Add a pinch of salt and pepper to taste.
- Continue mashing and stirring with the fork until the mixture is smooth and well combined.
- Spoon the yolk mixture into a piping bag or a large zip-top bag.
- Snip off a small corner of the bag to create a piping tip.
- Pipe the filling into the egg white halves using a circular motion to form ridges that look like a pumpkin's surface. Fill each center completely.
- For the pumpkin stem, place a small piece of chive or a snip of green onion on top of each filled egg.
