Scary-Simple Meringue Bones

Create eerie yet delicious meringue bones using just egg whites, sugar, and vanilla. Pipe them onto parchment using a simple stencil, then let them dry in a turned-off oven for an hour. They keep for weeks, making them a great make-ahead Halloween treat.

- Position oven racks in the top and bottom thirds. Preheat oven to 225°F. Create a 6-inch bone template on paper, then trace it onto two large sheets of parchment paper, leaving 1 inch of space around each bone. Flip the parchment over and line two large baking sheets with it, stencil side down.
- In a medium bowl, beat egg whites and a pinch of salt with an electric mixer on medium speed until foamy. Add cream of tartar and beat on medium-high until soft peaks form. Gradually add sugar, 1 tablespoon at a time, beating until stiff, glossy peaks form. Mix in vanilla extract.
- Transfer the meringue to a large disposable piping bag and snip off the tip. Pipe bone shapes onto the parchment, using the stencils as a guide.
- Turn off the oven. Place the baking sheets inside and let the meringues sit for 1 hour with the door closed. Remove from oven and cool completely. Store in an airtight container at room temperature for up to 2 weeks.
