Spider Eggs (aka: dressed up deviled eggs)

These spider deviled eggs are a fun and festive Halloween appetizer. Hard-boiled eggs are filled with a smoky paprika yolk mixture, then topped with olive spiders. Each spider is made from a single olive, sliced into a body and eight legs.

- Place 6 large eggs in a saucepan, cover with cold water, bring to a boil, then cover and remove from heat. Let sit for 12 minutes, then transfer to an ice bath.
- Once cool, crack and peel the eggs. Rinse them under cold water, then slice each egg in half lengthwise.
- Carefully pop out the yolks into a medium bowl. Set the empty egg white halves aside.
- Mash the yolks with a fork until crumbly. Stir in 4 tablespoons mayonnaise, 1.5 teaspoons mustard, salt and pepper to taste, and 1/4 teaspoon smoked paprika. Mix until smooth.
- Spoon or pipe the yolk mixture evenly into each egg white half.
- For each spider, take one large pitted black olive. Cut it in half lengthwise. Use one half as the spider body. Slice the other half into 8 thin strips for legs. Arrange the legs on the yolk filling, pressing them in slightly, then place the body half on top.
