- Take the seeds out of the pumpkin and rinse them clean.
- Place the seeds in a single layer on a baking sheet and roast for 1 hour, stirring from time to time.
- In a mixing bowl, stir together 3 tablespoons of the sugar, the salt, cumin, cinnamon, ginger, and cayenne pepper.
- Warm the peanut oil in a large skillet over high heat.
- Toss in the roasted pumpkin seeds and the remaining 2 tablespoons of sugar.
- Cook the mixture for roughly 45 seconds, until the sugar liquefies and the seeds become caramelized.
- Immediately transfer the caramelized seeds into the bowl with the spice mixture and toss until evenly coated.
- Allow the seeds to cool completely.
- Keep in an airtight container for up to one week.
