Made with whole wheat flour and honey, these pumpkin muffins are a wholesome alternative to traditional recipes. The batter comes together quickly and bakes at 330°F for about 25 minutes. Enjoy them plain or topped with streusel for extra crunch.

- Set the oven to 330°F and line a 12-cup muffin tin with nonstick liners.
- In a large bowl, stir together the whole wheat flour, brown sugar (if using), cornstarch, pumpkin pie spice, baking powder, baking soda, and salt. In a separate measuring cup or bowl, whisk the eggs, pumpkin, honey, and vanilla until smooth.
- Pour the wet mixture into the dry ingredients and fold gently until just combined—do not overmix. The batter will be quite thick.
- Divide the batter evenly among the prepared muffin cups (using a large cookie scoop works well for neat portions). Top with streusel if you like.
- Bake for 23–25 minutes, until a toothpick inserted in the center of a muffin comes out clean or with just a few crumbs.
