These three-ingredient pumpkin cookies are incredibly simple to make. Mix pumpkin puree, sugar, and flour, shape into flattened rounds, and bake until lightly browned. Cool briefly on the sheet before enjoying.

- Heat your oven to 350°F. Cover a baking sheet with parchment paper or a silicone mat.
- Combine the pumpkin puree, sugar, and flour in a bowl and stir until well mixed.
- Using a tablespoon-sized scoop, portion out dough, roll each into a ball between your palms, then press flat.
- Arrange the flattened cookies on the prepared baking sheet.
- Bake for 15 to 17 minutes, until the cookies are lightly browned.
- Take the sheet out of the oven and let the cookies cool on it for 5 minutes.
