These three-ingredient pumpkin cookies are simple to make and require only pumpkin puree, sugar, and flour. Mix the dough, shape into flattened rounds, and bake until lightly browned. Cool on the sheet for a few minutes before enjoying.

- Heat your oven to 350°F. Cover a baking sheet with parchment paper or a silicone mat.
- In a bowl, combine the pumpkin puree, sugar, and flour until well mixed.
- Using a tablespoon-sized scoop, portion out the dough. Roll each portion into a ball between your palms, then press it flat.
- Arrange the flattened cookies on the prepared baking sheet.
- Bake for 15 to 17 minutes, until the cookies are lightly browned.
- Take the sheet out of the oven and let the cookies cool on it for 5 minutes.
