These Halloween eyeball tacos are made with seasoned meatballs baked to perfection and arranged in taco shells. - Combine the ground beef with the taco seasoning mix from the kit.
- Roll the mixture into 36 meatballs, each about 1 inch in diameter, and arrange them in a 13x9-inch baking dish.
- Cook in an oven preheated to 350°F for 15 to 20 minutes, or until the meat is no longer pink inside.
- For each of the 12 taco shells, place one meatball inside, then add taco sauce, shredded lettuce, and chopped tomatoes.
- Dip two more meatballs per taco into sour cream and set them on top of the fillings.
- Finish by placing sliced olives on the sour cream–dipped meatballs to resemble eyes.
